What is Cold water swelling modified food starch ?
Roll-dried and Cold Water Swelling Starches. CWS (cold water swelling) is a special line of functional starches produced by spray-cooking technology. In this processes, the starches are cooked uniformly with minimum shearing and damages by heat.
These starches provide high performance, additional convenience, superior dispersibility and ideal flexibility in processing. They are highly versatile, recommended for cold manufacturing processes (moderate to severe) in which there is need for fast hydration, high tolerance to the process, excellent texture and a long shelf-life.
There are 16 food grade specifications of modified starches.
We at Algain General Trading LLC mainly focus on:
Acetylated Distarch adipate E1422: has high process tolerance. Meaning that it is resistant to high heat, shear and acid. it is typically used in foods as a bulking agent, stabilizer and thickener.
Hydroxy propyl distarch phosphate E1442: has high process tolerance, meaning that the resulting formulation are more stable in alkaline conditions and have very good freeze-thaw capabilities. Highly versatile starch characterized by excellent cold temperature strong stability and a smooth, creamy texture. it is recommended to be used in high PH foods as well as acid containing foods. It is well suited for canned products especially low acid, aseptically processed food such as cream based sauces and puddings. This product also is used in frozen foods such as pie fillings, gravies and sauces that are used for frozen entrees.
Starch sodium octenyl succinate E1450: Provides many benefits to ease the manufacturing process and create a quality end product. This is a modified food starch specifically designed for the encapsulation of volatile flavor oils. This modified starch has a low viscosity and both hydrophilic and hydrophobic properties.
